Cucumber and Tomato Salad

Here's a Cucumber and Tomato Salad recipe that I made while I was doing the 3 Day Refresh this week!


Ingredients:

  • 1 medium chopped cucumber

  • 1 cup chopped cherry tomatoes

  • 1/4 cup chopped red onion

  • 2 Tbsp apple cider vinegar

  • 2 tsp. balsamic vinegar

  • 4 tsp. fresh lemon juice

  • 2 tsp. extra-virgin olive oil

  • 2 tbsp. chopped fresh basil leaves

  • 2 tbsp. fresh Italian parsley

  • Any other seasonings you prefer to taste

Instructions:

  1. Combine apple cider vinegar & balsamic vinegars, lemon juice, and oil in a small bowl; mix well. Set aside.

  2. Combine cucumber, tomatoes, onion, parsley, basil, and seasoning in a large bowl; mix well.

  3. Drizzle dressing over cucumber mixture; toss gently to blend.

Pretty tasty summer salad!
