Strawberry and Mint Popsicles

Kansas is HOT, HOT, HOT this week! 🔥🔥🔥We are sitting at about 100°F every day this week, and let me teel you - I'm over it. While I LOVE Summer and getting into the pool, this is a bit ridiculous! So I've been looking for some cool recipes this week that don't require the oven (not that I normally require the oven for me Shakeology recipes). But anyway, there are TONS of delicious ways to prepare my favorite superfood: Shakeology - including some amazing COLD popsicles! So to beat the heat and keep up with my nutrition, I'll be enjoying lots of popsicles this week! 😍


Ingredients:

  • ¾ cup water

  • ½ cup fresh (or frozen) strawberries

  • 2 scoops Tropical Strawberry Plant-Based Vegan (or Strawberry) Shakeology

  • 2 Tbsp. fresh lime juice

  • 2 Tbsp. fresh mint, chopped

Instructions:

  1. Place water, strawberries, Shakeology, lime juice, and mint in blender; cover. Blend until smooth.

  2. Divide evenly into four ice pop molds; freeze for at least four hours, or until set.

  3. Serve immediately, or store in an airtight container in the freezer for up to 1 week.
