Okay can we just appreciate how pretty and beautiful these pancakes are?! If you have a daughter, imagine the look on her face being greeted with pretty pink pancakes for breakfast! Something about the color and topping with some fruit makes me feel like I’m swept away somewhere fancy... when that's anything but the truth.
The beauty of these is they are so simple to throw together and packed with nutrients thanks to our favorite friend Shakeology. It's also such a versatile recipe that can be used for breakfast or drizzled with chocolate sauce for a nutritional dessert. Yum!
Ingredients
1 scoop Strawberry Shakeology
½ tsp. baking powder
¼ cup / 60 ml unsweetened almond milk (or water)
1 large egg
Nonstick cooking spray
1 tsp. pure maple syrup
Instructions
Add Shakeology and baking powder to a small mixing bowl. Stir until combined.
Add almond milk and egg; stir until combined.
Heat a medium nonstick skillet over medium-high heat; lightly coat with spray. Spoon batter evenly into pan to form three small pancakes.
Cook for 2 minutes; flip. Cook for 2 additional minutes, or until cooked through.
Drizzle with maple syrup. Serve immediately or freeze in an airtight container for up to 1 month.
Portion Fix Containers: 1½ Red
Top with ½ cup (approx. 70 g) berries to make this a complete breakfast.
