Almond Espresso Energy Balls

Still reaching for the leftover Halloween candy?

Tired of feeling sluggish from a Monday holiday?

Craving something sweet, but know you need to start making better choices?


No worries. I've got you today with this delicious recipe of Almond Espresso Energy Balls. I love making any type of energy balls after a holiday - especially one so focused on candy. I continue to reach into my kiddos candy buckets for a piece one after another. 🍬 BUT I can do the same thing with energy balls and not feel nearly as guilty about it. PLUS, they have espresso to help us parents recover from Monday night's Halloween!


Ingredients:

  • 1 cup all-natural smooth almond butter

  • ¼ cup honey

  • ¾ cup dry rolled oats

  • 1 scoop Café Latte Whey Shakeology

  • ½ cup sliced almonds

Instructions:

  1. Combine almond butter, honey, oats, Shakeology, and almonds in a medium bowl; mix well with clean hands or a rubber spatula.

  2. Shape mixture into 24 walnut-size balls; place in airtight container.

  3. Refrigerate for at least one hour before serving.

  4. Serve immediately, or store in an airtight container in the refrigerator for up to five days
