Berry Tropical Smoothie Bowl

Let's talk smoothie bowls. Are we obsessed or do we think it's overhyped and its time has passed?


I personally enjoy a good smoothie. It’s a fabulous way to get in some nutritious fruits, veggies, proteins, you name it. Plus, it's the perfect breakfast or snack when you’re on the go and don't have time to slow down, sit down and have a meal.



BUT what about the rare moment you can sit down to eat breakfast? The bowl just takes it to a whole new level. By adding all the fresh fruit, nuts and seeds you add depths of flavor and texture. Plus who doesn't enjoy a meal that is both delicious and beautiful. Just look at this beauty.



Ingredients

  • 1 cup / 240 ml unsweetened coconut milk beverage

  • 1 cup / 170 g ice

  • ¼ cup / 50 g frozen pineapple chunks

  • 1 tsp. finely grated lemon peel (lemon zest)

  • ½ tsp. pure coconut extract

  • ¼ large banana, sliced

  • ¼ cup / 40 g sliced strawberries

  • 3 unsalted macadamia nuts, chopped

  • 2 tsp. unsweetened shredded coconut

  • 1 tsp. chia seeds


Instructions

  1. Place coconut milk, ice, Shakeology, pineapple, lemon peel, and extract in blender; cover. Blend until smooth.

  2. Pour smoothie into a shallow bowl. Top with banana, strawberries, macadamia nuts, coconut, and chia seeds. Serve immediately.

This recipe makes a great breakfast.
