Chocolate, Peanut Butter, and Banana Sweet Quesadilla

So if you know me well, you know my go to Shakeology shake recipe is Chocolate Shakeo, a banana, and peanut butter. So when I saw this recipe, I knew it was screaming my name! 😋 Plus it's super easy to make - and again, if you know me well, you know I'm not the main cook in this household. 🤣 I also have plans to make these with the kiddos over a campfire (but not actually camping - just in our backyard), because I saw something similar to this where you wrap it foil and melt it all like a s'more!

Ingredients:

  • 1 (6-inch) whole wheat tortilla

  • 1 Tbsp. all-natural smooth peanut butter

  • ½ large banana, thinly sliced

  • 1 Tbsp. dark chocolate (or semi-sweet) morsels

Instructions:

  1. Spread half of tortilla with peanut butter.

  2. Top peanut butter with banana and chocolate morsels. Fold tortilla in half; cook in medium nonstick skillet over medium-high heat, for 4 to 5 minutes, turning once, until chocolate is melted and tortilla is golden brown.

Portion Fix Containers: 1 Purple, 1½ Yellow, 3 tsp.

2B Mindset Plate: Enjoy as an occasional treat (with a bonus FFC). Be sure to track it.
