Who doesn't love pizza? 🍕I think part of the love comes from the fact that there are SO many styles of pizza and the toppings are endless. I was just talking with the husband saying that sometimes you want that classic delivery pepperoni. Other times it's the woodfire pizza where the toppings are elevated so you’re at the table googling only to find out its a fancy version of tomato or sausage, cheese ect... I'm not the only one, right?
Somewhere between delivery and woodfire we've got these pita pizzas. I love how quick and easy these are. It's perfect for lunch or family pizza night. The best part, because again pizza = unlimited variety, this is blank canvas. Play around with different toppings such as a good source of protein to really punch this meal up.
Ingredients
4 (6½-inch) whole wheat pitas
¾ cup all-natural spaghetti sauce, no salt added
2 fresh basil leaves, chopped
2 oz. shredded mozzarella cheese (½ cup)
¼ medium onion, sliced
1 medium yellow bell pepper, sliced into rings
Instructions
Preheat oven to 350° F.
Top pitas evenly with spaghetti sauce, basil, cheese, onion, and bell pepper.
Place pitas on baking sheet. Bake for 10 to 12 minutes, or until cheese is melted.
Portion Fix Containers: ½ Green, 2 Yellow, ½ Blue
Add protein and more veggies for lunch.
