Triple Berry Fro-Yo Bark

Can we believe July is days away? These last few weeks have just zoomed by, but they've been some of the most rewarding. Summit was this last week, and it was beyond incredible to see and celebrate so many amazing women out there conquering and doing big things. There is nothing better than being in a space filled with such empowering energy! Ah just amazing.



Another amazing thing, this delicious and oh so healthy Fro-Yo Bark. It is so refreshing, making it the perfect healthy treat for those hot summer days. It’s simple and easy to throw together and looks so pretty. You can even have the kids help make this, they might enjoy making their own designs.


Ingredients

  • Parchment paper

  • ¾ cup / 180 g reduced-fat (2%) plain Greek yogurt

  • 1 scoop Strawberry Shakeology

  • 1 tsp. pure vanilla extract

  • ½ cup / 70 g fresh (or frozen) blackberries, chopped

  • ½ cup / 75 g fresh (or frozen) blueberries

  • 3 unsalted sliced almonds

  • Plastic wrap


Instructions

  1. Line a 9 x 13-inch (23 x 33-cm) baking dish with parchment paper. Set aside.

  2. Add yogurt, Shakeology, and extract to a medium mixing bowl; stir until combined.

  3. Spread yogurt mixture evenly on parchment paper to desired thickness. Sprinkle evenly with blackberries, blueberries, and almonds.

  4. Cover tightly with plastic wrap. Freeze for 2 hours, or until firm.

  5. Cut (or break) into bite-sized pieces. Serve immediately, or freeze in an airtight container for up to 1 month.
